Today's Food

(This was AWESOME! Next time I'd finely dice the carrots instead of matchsticks as it would be easier to eat)

Raw Brownies
These are our go-to dessert when the sweet tooths (ie. me!) need something. This recipe originally came from someone on Planet VeGMeL but I can't remember where/when/who! If it's yours, please let me know so I can give you proper credit!

RAW BROWNIES

Base
1C of nuts of your choice (original recipe calls for walnuts, but we like to mix it up with cashews, almonds, and walnuts)
1C medjool dates, pitted
1/3 cacao powder
Process in food processor until mix looks like potting mixture. Press into a square tin.

Topping
1 avocado
30ml cacao
40ml agave
2t vanilla
pinch cinnamon
Blend with immersion blender/ blender until smooth. Smooth over the top of base and freeze for one hour. Cut into small squares and keep in freezer.

Today's food

LtoR: Lettuce and cabbage cups, cabbage wraps filling (pink bowl) and peanut sauce (cup at back), dates stuffed with almonds, chocolate avocado pudding, broccoli raisin salad, raw cheese, onion bread.

Raw Cheese
1 red capsicum
3/4C pine nuts
1/2C sunflower seeds (soaked for 2 hours)
juice of 1/2 lemon
1T nutritional yeast
2T nama shoyu
1 garlic clove

Blend until smooth.
My favourite things to dip are: broccoli, asparagus, mushrooms, carrots, capsicum, snow peas, cucumber, spread on raw bread or lettuce leaves.

Chocolate Avocado Pudding
2 avocados
1/4C cacao
1/4C agave
1/4C dates
water as necessary

Blend until smooth.
Eat by the spoonful or use fruit to dip.
